attempt #2, lowered the temperature a bit and let the yeast sit in warm water for a bit before adding to the dry ingredients. Also used half whole wheat flour and less salt, turned out even better this time! Think I’ve found a keeper

Cast Iron Beer Bread
a new recipe I tried out, inspired by one I saw on the cooks illustrated podcast. Very interesting method of introducing steam into the baking process (which most pro ovens have), by using a dutch / cast iron oven to bake the dough, trapping the moisture inside. Forms a great crust!
